Herbal Broth

1/2 onion, minced

1 large carrot, minced

1 large parsnip, minced

2 celery stalks, minced

2 cloves garlic, minced

1 inch fresh ginger, minced

salt and black pepper to taste

3 Tbsp ghee

1 quart stock, chicken, vegetable or mushroom

1/4 cup dried calendula

1/4 dried oatstraw

2 Tbsp dried burdock

2 Tbsp dried thyme



Saute the onion, carrot, parsnip, celery, garlic, ginger, salt and pepper in the ghee until soft and translucent. Add the stock and the herbs and bring to a boil. Then, turn down the heat and simmer for about 20 minutes. Enjoy alone or use to braise meat or vegetables!
